Happy New Year - 2013!!!
The tradition in the American South is to have black-eye peas as your New Year's meal. Try my variation.
- Prepare your peas in your usual fashion.
- In a separate pot cover whole salted peeled cloves of garlic with olive oil and bring to a boil over medium heat
- When it comes to a boil take it off and let it cool completely before returning to the fire. Repeat the process 3-4 times until the garlic can be easily pierced with a fork.
- Cut up some fresh chives
In a serving bowl you will ladle on your peas, dress it with the garlic oil you just created and garnish with whole garlic cloves. Sprinkle on the chives.
Your dish will be rich without being fatty, punchy with flavor, and elegantly decadent.
There's lots of great things planned for 2013! I haven't done a New Year's resolution in a while. The concept brings to mind committing to things you don't really like anyway. For example to resolve to exercise more is nothing more than a an exercise in drudgery. The only way you will lose weight is to become passionate about health and a workout that you love. No one tells martial artists to train nor marathon runner to jog. It brings so much joy to their lives that it comes naturally.
For New Years I continue to deepen my passions. I have no new resolutions. I only aim this year to become better at what I do and what I'm passionate about. There are plenty of people who have no passions. Nothing to fight or sacrifice for, and for those no New Years resolutions will ever be effective.
